THE VIOLETTA STORY OF TRADITIONAL NAPOLI PIZZA CIRCA 1788

Pizzeria Violetta is a celebration of Naples; the original home of Neapolitan or DOC (denominazione di origine controllata) pizza. The Italian city is renowned for pizza with a wonderfully charred and blistered crust and a soft and elastic centre; providing a well of true Napoli flavour.

Pizzeria Violetta’s expert pizzaiolis adhere to the age-old tradition of pizza making. Using the highest quality 00 flour, they hand-stretch the dough, let it rest for 12 hours, top it with cured meats, cheeses and ingredients from both Italy and Australia before cooking it in a Stefano Ferarra wood fire oven - blazing at 400 degrees – for just 90 seconds.

The herbs and greens that add zest and freshness are straight from Nonna’s Brisbane garden – bellissimo!

This traditional cooking method is dictated by the Verace Pizza Napoletana. It is real Italian eating and age old simplicity – who could argue with the authentic pizza recipe and cooking methods from Napoli in 1788!
